Why Cheap Cuts Of Meat Need Different Cooking
The price gap between cuts reflects connective tissue rather than quality, and the slow methods that suit cheaper cuts produce results expensive cuts cannot.

The price difference between cuts of meat from the same animal is large and consistent. It tracks the anatomy of the muscle rather than any measure of quality.
Working muscles are built differently
Muscles that do sustained work, such as shoulder, leg and neck, develop dense connective tissue to hold the fibres under load.
Muscles that do little work, such as those along the back, stay tender because they never needed that reinforcement.
There are far fewer of the low-work muscles on any animal, so scarcity and tenderness push their price up together while the rest of the carcass stays cheap.
Connective tissue converts rather than disappears
The main component of connective tissue is collagen, which is tough and unpleasant when briefly cooked.
Held at a moderate temperature in the presence of moisture for a long period, collagen converts to gelatin. The tissue that made the cut tough becomes what makes it succulent.
This conversion is slow and needs both time and moisture. Fast, dry heat drives the water out and leaves the collagen unconverted, which is why a cheap cut grilled quickly is inedible.
Fast heat suits only the tender cuts
Grilling, frying and roasting work by browning the surface before the interior overcooks. They rely on the cut already being tender.
Applied to a working muscle, these methods have no opportunity to break down collagen, since the meat passes through the useful range far too quickly.
The reverse also holds. A tender cut braised for hours loses its texture entirely, because it had no connective tissue to convert and simply dries out.
Slow methods return more than tenderness
Braising and stewing keep the cooking liquid, which collects gelatin, rendered fat and dissolved flavour compounds from the meat.
That liquid becomes part of the dish. In fast cooking the equivalent material is lost to the pan or the oven.
Bones add to this. Cuts sold on the bone are cheaper per kilogram and contribute more gelatin, which is why bone-in cuts suit slow cooking particularly well.
The cost is time, not attention
Slow cooking takes hours, which is the reason it is often dismissed as impractical. Almost all of that time is unattended.
The active work is fifteen minutes of browning and chopping. The remainder happens in a low oven or a covered pot without supervision.
These dishes also improve on reheating and freeze well, so a single session covers several meals and shifts the effective time cost down further.
