Why Frozen Vegetables Often Hold More Nutrients
Freezing halts the decay that begins the moment a vegetable is picked, which is why the frozen version can carry more of some nutrients than the fresh one.

Frozen vegetables are usually cheaper than fresh ones and are widely assumed to be nutritionally inferior. The assumption comes from how the two are grown, not from how they are handled after harvest.
Picking starts a clock
A vegetable is a living tissue until it is picked. Once cut from the plant, it keeps respiring, burning through its own sugars and breaking down some of its more fragile compounds.
Water-soluble vitamins are the first to go. They degrade with time, warmth and exposure to light, which means a vegetable loses some of its content steadily on the journey to a kitchen.
That journey is the variable nobody sees. Fresh produce may have been harvested days or weeks earlier, moved through packing houses, distribution centres and a shelf before anyone eats it.
Freezing stops the clock early
Vegetables destined for freezing are usually processed close to where they are grown and within hours of picking. The decay clock is stopped near its start rather than near its end.
Most are blanched first, which is a brief immersion in hot water or steam. This deactivates the enzymes that would otherwise continue degrading colour, texture and flavour even at freezer temperatures.
Blanching costs some of the water-soluble content, which is a real loss. What it buys is stability, so the nutrient level after blanching stays roughly where it is for months.
Why the comparison is not straightforward
The honest comparison is not frozen against fresh in the abstract. It is frozen against fresh that has spent an unknown number of days in transport and storage.
A vegetable bought at a market the morning it was picked will generally beat the frozen equivalent. A bag of leaves near the end of its shelf life will generally not.
Different nutrients behave differently, too. Fat-soluble compounds and minerals are far more stable than the fragile vitamins, so the gap between fresh and frozen varies by vegetable.
Where the price difference comes from
Frozen vegetables are cheaper largely because they are cut loose from the calendar. They can be processed at peak season in bulk and sold across the whole year at even prices.
They also remove the retailer's waste problem. Fresh produce that does not sell is thrown away, and that loss is priced into everything on the shelf.
The household waste saving is the larger effect for most people. A frozen bag is used in portions over weeks, while a fresh bunch is bought whole and often part-discarded.
What this means for a shopping basket
The practical reading is that frozen is a legitimate default rather than a compromise, particularly for vegetables you use in small quantities or intermittently.
Frozen also changes the failure mode of a week's cooking. Fresh produce forces a plan; a freezer stock tolerates the evening when the plan collapses.
Anyone with a specific dietary requirement or medical condition should take advice from a qualified professional rather than reasoning from general nutrient behaviour alone.
